Mate cocido, which was originally prepared with loose yerba mate, is a practical, different way to enjoy yerba.
*MATE COCIDO IN BAGS
In 1965 Establecimiento Las Marías made the preparation and consumption of mate cocido easier by developing yerba mate in bags. The processing of mate cocido in bags is exactly the same as that of yerba. The only difference lies in the milling, where only the leaves of yerba mate are processed and classified, discarding the stems and powder. This special selection makes it possible to prepare a crystalline mate cocido of excellent quality.
* INSTANT MATE COCIDO
Instant Mate Cocido, launched by Las Marías in 2002, is also processed from the same Taragüi yerba used for bags or loose yerba. As is the case with the processing of all its infusions, this is a natural process in which no chemicals are used; it consists in adding hot water to extract the aromas and flavors, and later dehydrating or drying to obtain a granulated product. During the process, the quality of the water, the temperatures and other parameters are especially controlled, so as to preserve all the qualities of yerba in a more practical product. While the explanation of the process is simple, it demanded years of development because the aim of Las Marías was very ambitious: obtaining a more practical, instant mate cocido, identical to the traditional one. |
